Recipe: Banana Apricot Muffins

This is a recipe of my own creation!  Imagine that!   I looked at a few recipes for bananas and apricots and too many had ingredients I didn't have in the house.   So I decided to try my own hand at it and to my delight they turned out well. :)


Ingredients
2 eggs, beaten
2 ripe bananas, mashed 
1/2 cup apricots, cut into small pieces
1/4 cup oil

2 cups flour
1 tsp salt
3/4 cup white sugar
1 tsp baking soda

Directions
1. Mix first four ingredients together in a separate bowl.
2. Mix last four ingredients together in a separate bowl.
3. Make a well in the dry ingredients, then add the wet ingredients, stir until decently combined but not completely.
4. Makes 12 muffins cooked in a 350 oven for 20 to 25 minutes.

 Mine - YAY!!   They turned out!

Hubby - Good muffins, good job hun.
